Yes, Stone Crabs are cooked as soon as they are taken off of the boats. We boil them for 8 minutes and then cool them off in ice and water to stop the cooking process. They are ready to eat upon arrival!
The back of a butter knife will be your best friend while cracking Stone Crabs! Make sure you don’t use too much force to crack the claws. The shells can get stuck in the claw meat. We recommend that you don’t crack the Stone Crabs until you are ready to eat them.
We recommend eating the stone crabs on the same day that they are delivered, especially if they are already cracked (only available in Miami-Dade). If you are unable to eat them on the same day that they are received, you can store them in your fridge uncracked for 2 to 4 days and enjoy your still-fresh claws when you are ready.
